Congratulations, Tampa -- the hustle and bustle of the holiday season is finally over. Santa, along with your sanity, has left the building. But with all the shopping, wrapping, cooking and cleaning that go into making the holidays so special, it would be hard for anyone to attend all of this past season’s major events. Luckily, we’re here to provide you with the quick highlights of the events in the last two months of 2015: from talking Jaws with Richard Dreyfuss to the best New Year’s Eve parties the city had to offer -- in case you missed it. December kicked off with a whirlwind of action at the Straz Center on Saturday, Dec. 5. The National Circus and Acrobats of the People’s Republic of China presented “Peking Dreams,” a brilliant routine that features Chinese martial arts, acrobatics and unbelievable stunts. The show also was performed in 2008 at the Beijing Olympic Games. With nonstop action and breathtaking costumes, this show made sure to dazzle and delight. The hottest stars, all in one place: that’s what music fans from all over Florida enjoyed as part of 93.3 FLZ’s Jingle Ball 2015. The annual event, which was held on Saturday, Dec. 19, featured Demi Lovato, Shawn Mendes and Tove Lo performing to starstruck audiences at the Amalie Arena. Tampa was one of two of the massive show’s Sunshine State stops, and featured a free pre-show outside of the Amalie Arena. Ticketholders and music fanatics jammed out to their favorite stars just before Christmas, and all for a good cause -- one dollar of each ticket sold was donated to The Ryan Seacrest Foundation, a youth-focused non-profit. Catch ya never, 2015. Tampa residents donned their best threads and headed out to The Rooftop Eve’s Midnight in the Garden, the hottest NYE party in the Bay area. As they waited for the clock to strike midnight, guests partied on the roof of the 10-story tall Fort Brooke Garage and danced to Frequency Band and DJ Papi. Later, they enjoyed drinks, glamour and plenty of fireworks -- both in the Tampa skyline, and with a kiss from a New Year’s cutie.

The Academy Award winner was no fish out of water when he spoke to a packed audience at the Capitol Theatre on Saturday, Jan. 9. Dreyfuss’ appearance marked both the start of the new year, and the 40th anniversary screening of the shark-tastic masterpiece. After a showing of the 1975 film, Dreyfuss led a Q&A session with audience members followed by a meet and greet with VIP ticket holders. The screening and jaw-dropping Q&A session were led by Tampa Bay Times film critic Steve Persall. Mid-January saw its own high notes. On Saturday, Jan. 16, Deke Sharon, the artistic producer for the aca-awesome film Pitch Perfect, brought his latest musical masterpiece to the Straz Center. “Vocalosity: The Aca-Perfect Concert Experience” took a capella performances from the big screen to the stage. Much like the Barden Bellas, Sharon’s young ensemble performed musical numbers from all genres and time periods -everything from barbershop quartets to The Beatles. Talk about aca-amazing.

For quite some time, we’ve seen the veneer of traditional monogamous relationships being chipped away by social media, dating websites and apps such as Tinder or Match.com. Posting racy photos on Instagram, whether the user is in a relationship or not, has become totally acceptable. This new standard has provided outlets for restless husbands, wives, boyfriends and girlfriends to satiate their boredom while still remaining “faithful.” It’s not voyeurism, it’s social media! And a little “swipe right” every now and then is totally harmless! Sure we’ll go with that. But the statistics paint a different picture: participation in these “harmless” frolics may very well be the culprit for the plummeting popularity of the traditional monogamous relationship.

It’s generally understood that traditional monogamous relationships are two people who are committed emotionally and physically to one another. This commitment can be in or out of wedlock, although when legally-binding marriage is involved, the rules become more serious: marriage to more than one person at a time is illegal in all 50 states (distinguish this from religious cohabitation with multiple partners, which is constitutionally protected in some states). In the past few decades, Americans have become cynical when it comes to monogamous relationships, more specifically

marriage: census data cited in a 2014 study by the Pew Research Center show that the number of married households fell to 50.5% in 2012 from a high of about 72% in 1960. The study notes that there a number of cultural reasons for the shift away from marriage, particularly that American society is conflicted about the institution’s role in modern day life (SnapChat, anyone?). Either people are holding out for that “special someone” (census data indicates when people ages 25-34 reach their mid-40s and 50s, just 25% of them will be married), or the dream of the “white picket fence” is no longer the utopian goal.

Whatever the reason – and there are a myriad of philosophies on this topic – dating websites are doing their homework and responding accordingly: In January 2016, The Atlantic reported that OkCupid, a popular online dating platform, is adding a feature tailor-made for polyamorous people. The new setting allows users who are listed as “seeing someone,” “married,” or “in an open relationship” to link their profiles and search for other people to join in their relationship. According to OkCupid, 24% of its users are “seriously interested” in group sex and 42% would consider dating someone already involved in an open or polyamorous relationship. This is an 8% increase from five years ago, when a similar poll was conducted. Most notably, the amount of users who are exclusively committed to monogamy has fallen to 44%, a minority of all users (down substantially from 56% in 2010). “It seems that now people are more open to polyamory as a concept,” said Jimena Almendares, OkCupid’s chief product officer. Or maybe just more public about it.

Polyamorous dating sites have been around for years, but the launch of a polyamorous option on a truly mainstream platform like OkCupid is a first (most likely the first of many). So far, society seems to have tacitly accepted the public unveiling of the new polyamorous frontier – no outrages, no critiques, no protests, and limited, if any, negative press has surfaced about the app’s new option. Perhaps because the concept isn’t that novel at all; it was just a well-kept secret. In fact, Psychology Today reported in 2014 that “sexually non-monogamous couples in the United States number in the millions.” With such an overwhelming population participating in non-monogamy, could it be possible that participants may start seeking equal marriage rights and abolishment of anti-polygamy laws? Only time will tell. But for now, read those profiles carefully, or you may just find yourself sitting at a table for three on Valentine’s Day.

Many a romantic heart has claimed Shakespeare as the authority on the mysterious force of love, and as expressed in this excerpt from A Midsummer Night’s Dream, the playwright has engraved the image of Cupid onto the hearts of cultures worldwide, a mythical being forever serving as an illustration of love’s sting. This Shakespearean stanza has become an eloquent excuse to attribute the blame of romantic misadventures to a winged arrow-shooting child, whose weaponry of choice seems to expose both true love’s innocence and the sentimental folly of fleeting emotions. Cupid is an international image of love, and thanks to Shakespeare, he has remained a figure that we still find on Valentine’s Day cards and the lips of lovers who fail to find a more realistic reason for their feelings of romance. However, it was centuries before Shakespeare when Cupid originally found his wings. According to mythology, Cupid was thought to be an ancient Roman god of love, and his mother was Venus. The mythical Cupid gained his reputation of love in a legendary story of his tragic bride, Psyche. Jealous of mortal Psyche’s beauty, Venus ordered Cupid to destroy her, but instead, he fell in love with her and took her as his wife. As a mortal being, Psyche could not look at Cupid, and as long as their eyes never met, she lived a happy life. However, when persuaded by her sisters, Psyche looked at Cupid, who punished her act by deserting her. The mortal Psyche found herself alone, with no sight of her beloved Cupid. Wandering the world in search of him, she came upon the temple of Venus.

The cruel goddess gave Psyche a series of dangerous tasks, convincing her this would bring her happiness. For her last task, Psyche was told to visit the underworld to retrieve a dose of the beauty of Proserpine, the wife of Pluto, and bring it back to Venus in a box she had been given. Told by Venus not to open the box, Psyche disobeyed as temptation came over her, and fell into a deadly slumber. Cupid found his bride’s lifeless body on the ground, and moved by her love for him, forgave her, as did Venus. Amazed at Psyche’s devotion to Cupid, the gods made her a goddess, and the immortal Psyche and Cupid were wed as equals. Even against his mother’s wishes, love prevailed in Cupid’s story. Although today Cupid is often viewed as a careless creature, the story of his forgiveness of Psyche originally cast a light of benevolence on the now-humorous character. As the centuries past, Cupid’s persona changed over time, but he always kept his wings, as well as his bow and arrows that pierce into the hearts of lovers-to-be. Historians have often attributed the winged nature of cupid to the flightiness of sensual emotions, which likely change one’s perception of his or her lover. In some myths, Cupid’s bow and arrow are accompanied by a torch, which symbolizes the love that inflames the innocent heart. So from Roman mythology to boxes of chocolate, Cupid remains a signature image in cultural romance, and the rest is history—well, mythology.

What is “paradise?” We often define the term by an idea of a utopian destination. For most, the idea of paradise looks like an exotic island in the middle of the ocean. We picture an infinite shoreline of powdery white sand and the ocean waves gently breaking on the land. The picture of a cloudless, crystal blue sky that enhances the colors of the ocean and the green palm trees that sway from the warm ocean breeze, creating a soothing sound as it harmonizes with the waves breaking on shore. Paradise. For me, paradise was found and it wasn’t just a place - but a feeling. In the physical sense, I first landed in paradise on a sunny Wednesday afternoon at Robert L. Bradshaw International Airport, located just northeast of Basseterre on the island of St. Kitts, and thus making it the very beginning of my adventure on the two-island country of St. Kitts and Nevis. St. Kitts and Nevis were among the first islands in the Caribbean to be settled by Europeans. The island is approximately 104 sq mi and has a population of about 55,000. Little did I know landing that these tiny islands in the Caribbean would capture so much of my soul, hence - feeling like paradise. Walking off the plane, I wasn’t expecting to be greeted by a friendly YU Lounge Concierge. In fact, I didn’t even know what the YU Lounge was, but with the VIP Package provided by the St. Kitts Marriott Resort & The Royal Beach Casino, I was about to find out. YU Lounge is a private airport terminal, with a luxurious lounge, concierge and FBO services, designed for business jet and airline passengers. Upon arrival, YU Lounge guests are picked up in a luxury vehicle, transported to the YU Lounge, and that’s it! The concierge does everything else for you, from picking up your checked in luggage to customs, all while you sit back, relax, catch up on emails using their complimentary Wi-Fi, sip on bubbly champagne and refuel on tasty hors d’oeuvres. After departure from the YU Lounge to the St. Kitts Marriott Resort, I wasn’t expecting to soon be entering into a luxury, spacious and welcoming hotel lobby where I’d soon be guided to my suite that was too good to be true. As much as enjoying the comforts of the room was just what I needed, there was a lot of resort and island to see – so off I went to explore this extraordinary property. When the term “paradise” becomes both a feeling and a destination, it’s most likely going to happen when you’re cruising across the Caribbean on a spacious Catamaran to St. Kitts’ sister island, Nevis. I’ve had a hot stone massage before, but the bamboo knocks the hot stones out of the water! I left feeling relaxed and completely rejuvenated. After my treatment, I enjoyed a few minutes in their refreshing Jacuzzi, which was the perfect touch to the end of a world-class spa treatment. There’s only so much that words can do to bring a destination, such as St. Kitts and Nevis, to life. The only thing left to do is book a ticket and a St. Kitts Marriott VIP package, and get yourself over there as soon as possible! So when you’re looking for paradise, remember that it’s not always a place, but the way a place makes you feel. I can’t wait to get back to the dreamy days gliding along the Caribbean Sea without a care in the world, just a short and easy plane ride away to St. Kitts and Nevis. Throughout his monumental career, David Bowie had celebrated the many facets of life by becoming a variety of characters, representing the entire spectrum of the human experience in one beautiful soul. As an artistic voice in a cultural wilderness, Bowie lived his life striving to memorialize the rainbow of mankind, and in our efforts to keep his career of characters alive, we often forget to see him as David, the boy behind Bowie. In remembrance of the legacy of the legend, we stand in awe not just at the artistry of David Bowie, but at the man himself. With such a sudden loss of an artist who shaped the sound and aesthetic of musical culture around the globe, we are faced with the challenge of finding the proper means with which to pay our respects to such a man of genius. From a critical perspective, one could begin by listing the singer’s awards and accolades, of which he has won many. However, Bowie fashioned his timeline on earth to reflect the value of everything on the other side of accomplishment: the beauty of the unknown and the unspoken-for. Time and again, Bowie found the loveliness of anything that entered his mind, and this loveliness was often a projection of Bowie’s spirit upon that which his mind beheld. Many of us are familiar with his experimental sound, androgynous persona, and idealistic fantasies that proved the artist longed to view the world with a new set of eyes, but Ziggy Stardust can’t take all the credit for Bowie’s soulful desire to exaggerate the beauty of the misunderstood. Now that we are left with nothing more than the history of a history maker, it seems fitting to honor the artist, rather than the characters of his creation. David Bowie was born David Robert Jones, the man who could find greatness in the everyday as easily as he could in outer space. Jones, who once stated of the Oxford English Dictionary, “When I first read it, I thought it was a really, really long poem about everything,” saw both the practicality and possibility of cultural aspects many would not even give a second look. Perhaps that is what separated Jones into his own class of being; he understood the necessity of cultural and intellectual progression as well as how to make the unnecessary a vital part of that progression.

Jones was undeniably a genius, led by the intent to expose the limitations of culture and simultaneously prove that no such limit could exist. What truly made Jones stand out even as he was standing in as Bowie was his spirit of international sensitivity that was marked by a sense of elegance and generosity rare in most of the rock stars of the time. Rather than seeking fame, whether musical or artistic, Bowie saw himself as a builder of bridges between the most distant worlds, and this was widely seen in his variety of recording ventures, including his latest release, Blackstar. This 25th and final studio album is essentially a testimony of a creative soul searching for renewed life after one-too-many endings that all but ended him. As can be heard in his single, “Lazarus,” Jones expresses the sentiments of one who knows there is still life to be lived, even when the world is against him. Once again, we find Jones seeking to make the lost feel loved and the unknown understood. He may have viewed himself as a voice to the voiceless, but Jonesturned-Bowie was truly a star—and one of his own making. Today we remember that star, which still shines brightly across the sky of a sunset of progress in the music world. Most resolutions have something to do with health and weight loss, and while we have every intention of staying strong and following through, let’s face it... most of us have abandoned ship by day 32. Don’t let a small hiccup disrupt your entire year. Instead, begin small. These five habits that are simple to implement in any routine are sure to keep you on track for 2016.

Weight gain is a byproduct of this process as your body begins to store excess fat from food in preparation for the next time it has to make its own sugar. Snacking every two to three hours helps to regulate your body’s natural sugar, in turn keeping your liver from over producing glucose.

INDULGE: There’s a difference between indulging and binging, don’t get confused. Cutting out any food cold turkey is never a good idea. While it may seem responsible to give up your secret vice of chocolate or that “bad for you” food, this only leads to poor decisions and regret at the bottom of a pint of Ben & Jerry’s later on. Curb your appetite with natural alternatives like a small piece of

GET ENOUGH SLEEP: Our society seems to be the society that never sleeps. Put the chips and device down after 9PM to allow your body time to feel tired naturally. When you don’t allow your body to sleep, you lose less weight and disrupt your body’s natural schedule. A study published in the Annals of Internal Medicine proved the impact sleep has on weight loss when the study put two groups of dieters on different sleep schedules. The study found that the group that slept seven to eight hours each night lost significantly more weight than the group that slept less, even though their diets were identical. The University of Chicago also found that inadequate sleep actually changes your fat cells. After only four days of sleep deprivation, your body’s ability to correctly utilize insulin becomes completely disrupted and insulin sensitivity in your body drops by 30%.

Because weight fluctuates from day to day, checking your progress daily only leads to discouragement and a sense of failure when you see your weight rise half the time. Studies also show that on average, Wednesday is the day weight fluctuates the least, so weigh yourself first thing every Wednesday morning to get the most accurate reading of your progress. Fun Fact: A new study determined how much weight the average person needs to lose before people around him or her begin to notice. If you’re of average height, (5’4” if you’re a woman and 5’10” if you’re male) you need to lose eight pounds, Babe, or nine pounds if you’re a bro before people starting asking that glorious and slightly awkward question, “have you lost weight?” The study also determined that you’ll need to lose 14 pounds if you’re a lady and 18 pounds for you gents before people begin to find you more attractive. So don’t fret if you’re feeling discouraged because no one’s noticed yet. Eight pounds is a milestone well worth the work. And remember to talk with your doctor before starting any new diet change or exercise regime.

It’s worse than it sounds: A healthy body’s fat cells remove fatty acids and lipids from the bloodstream to prevent fat storage. In an unhealthy, sleep deprived, insulin resistant body however, lipids roam free, circulating in your blood to create more insulin. The Excess insulin doesn’t know what to do in the body so it stores extra fat in all the wrong places, like your liver. If losing weight really is your top priority this year, logout of twitter and log some hours on that sleep number. STAY OFF THE SCALE: If you’re like me when you start a new diet, the first thing you want to do every morning is check your progress. This is the complete opposite of what you should do. Step away from the scale. I repeat, STEP AWAY FROM THE SCALE.

Wifi Syndrome is characterized by a variety of nonspecific symptoms, which afflicted individuals attribute to exposure to electromagnetic fields (EMF), according to the World Health Organization. Though EHS is idiopathic, more and more Wifi Syndrome reported cases are surfacing, making people question the consequences of being on their phones and other technology gadgets for extended periods of time.

Thanks to it, we can now be connected almost anywhere, at almost any given time. And while it has brought many people together, it has also strained relationships and friendships due to an ever-growing dependence on our gadgets and less interactions with those right in front of us. Like everything in life, it has its pros and cons. But you may not know about a particular developing con regarding the tech world. It’s called Electromagnetic Hypersensitivity Syndrome, (EHS), or more commonly known as Wifi Syndrome. 62

WITH YOUR PHONE? Every time you are on your phone, surfing the web on a computer at home, or watching Netflix on your tablet, you are exposed to electromagnetic fields. People have allegedly begun having “allergic reactions” to EMF, reporting symptoms such as nausea, tiredness, concentration difficulties, burning sensations and more. While there has yet to be a determined cause to this alleged condition, the World Health Organization does acknowledge it. Researchers around the world have begun looking into this theory of EMF causing detrimental symptoms for people, but have had little luck so far discovering strong enough correlations to declare it. And though multiple people have similar symptoms, their symptoms have one BIG thing in common ― they’re nearly undiagnosable due to the plethora of health factors possibly responsible for the symptoms. One could be experiencing tiredness due to lack of sleep rather than too much EMF exposure. Another person could experience nausea due to their diet.

This is not to say EHS isn’t real, but concrete evidence is hard to muster when scientists are unable to determine clear correlations. In addition to symptoms possibly being caused by health factors unrelated to EMF, there is also what is known as a “nocebo effect,” which is when people tend to feel sick because they believe they’ve been exposed to something that will sicken them. This is another potential conclusion to people’s Wifi Syndrome symptoms. Regardless of whether you believe Wifi Syndrome is a real disorder or a myth, if you are experiencing any unusual symptoms, it’s always best to just go to a doctor and get checked out. Wifi and our everyday technological habits are still significantly modern, hindering our chances of knowing all of the potential health hazards EMF’s can cause. What has been declared is Computer Vision Syndrome, which is eye and vision-related problems that result from prolonged computer, tablet, e-reader and cell phone use causing eye strain, headaches, dry eyes, blurred vision and more according to the American Optometric Association. AOA claims that because the visual demands of the task exceed the visual abilities of the individual to comfortably perform them, CVS occurs. Aside from vision issues, there is also speculation that demanding use of cell phones and computers can be linked to an increase in stress, sleep disorders and depressive symptoms, though few studies’ outcomes have been conclusive. Last year Downtown Disney officially changed their name to Disney Springs, but the name isn’t the only thing that’s new at the popular entertainment complex. 2016 has brought with it an exciting time of change for fans of La Nouba by Cirque Du Soleil. The contemporary circus production first premiered on December 23, 1998 in a custom-designed theatre built right in the heart of Central Florida. Since then, the magnificent structure has stood ever tall and proud over the Disney Springs skyline. A beaconing symbol welcoming thousands of spectators into the extraordinary and magical world of Cirque Du Soleil.

Over the years, the ever evolving La Nouba has gone above and beyond to ensure a fresh, captivating experience for each and every guest. From updating old acts to introducing new acts, La Nouba has never failed to adapt its show and never has that been more evident than now with the addition of two brand new acts to their already impressive roster of talented performers. As creatures of habit, some past attendees of the show may say La Nouba was just fine the way it was and didn’t need updating…and they wouldn’t necessarily be wrong! La Nouba has had a longstanding reputation for being one of Orlando’s best family friendly shows for good reason. are certainly showing us that change can be a good thing. Case in point? The recent introduction of an all new B-Boy act. Buckle up and prepare to enter the world of breakdancing—La Nouba style!

performing their act for the first time in the United States. Only Disney Springs guests will have the rare opportunity to view this dynamic duo as their act can only be seen on the La Nouba stage. The breathtaking performance requires extreme trust as for most of the act, Ekaterina is held only by Alexander – his arms, his feet and even his teeth – as he himself hangs by his feet or arms high above the stage.

The show now features a B-Boy trio in their own electrifying act, a first for any Cirque du Soleil show. B-boying or breaking, also called breakdancing, is a physically demanding style of street dance that originated in the mid-1970s. The La Nouba artistic staff scoured the globe for their three inaugural B-Boys: Josh Ortiz (“Incredible Josh”), Jean Carlos Lloret (“Bebo”) and Dmytro Li (“Flying Buddha”). The three hail respectively from the Bronx, N.Y., the Boston area and Ukraine and are now performing together for the first time on the La Nouba stage. All three have been dancing since their youth and bring their own unique styles to the act. Guests can watch in amazement as the B-Boys execute acrobatic tricks and moves, including flips and spins, to the fast paced, live music.

Men and women, young and old...there are few experiences in life that can genuinely be enjoyed by everyone and it’s clear that La Nouba takes great pride in boasting such an all-encompassing show. Language barriers, age gaps, different cultures and a host of other dividing traits are left outside the door once you step into the La Nouba tent and become fully immersed in the beautiful experience. A clown duo will lead the theatre in hearty laughs throughout the night without the need for words. A live band and powerful singers will bring chills over you as they perform the custom composed music. The fascinating acts will leave you filled with awe and appreciation. There have always been a hundred reasons to see La Nouba, but now there’s two more reasons to add to the list. The show’s new acts are unlike anything audiences have ever seen before. In addition to the upbeat, high energy thrills of breakdancing, La Nouba has also added a tranquil, yet mesmerizing Aerial Bamboo performance to their phenomenal show. Originating in China, the delicate art form involves a pole-shaped apparatus suspended from the ceiling, with attached loops used for a variety of tricks and stunts. Originally, the pole was made of bamboo, giving the craft its name, but it is now made with stainless steel. The technique is mastered by only a handful of performers worldwide. Two of those performers are Russian couple Alexander and Ekaterina Abramov who are now

Ingredients: 2 oz vodka 2 oz tomato puree 1/2 oz lemon juice 1 big dash Worcestershire sauce 2 teaspoons freshly grated horseradish

After one month of hard work, indulge in our ultimate recipe and enjoy this beverage all-the-way, complete with cooked crab legs and shrimp for a protein kick. This drink’s not hard to make. To say Olivier Zambaux knows a thing or two about Champagne, just might be the understatement of the year. Zambaux has been with the Walt Disney World Swan and Dolphin Resort for more than 11 exciting years and for the last four years he’s been living out his passion as the Assistant Director of Banquets.

“What I like about the job is it’s always changing. One day it could be an event for two people and then the following month we’ll have an event with 13,000 people. It’s always changing and it’s challenging for everyone here at the hotel, especially for banquets, and I like that.” -Olivier Zambaux Zambaux has also been instructing the always popular Champagne Seminar at the annual Walt Disney World Swan and Dolphin Food & Wine Classic ever since the first event was held in 2010. The fact that Zambaux has been a Wine Sommelier with the Court of Master Sommeliers for 8 years would be reason enough for him to have the authority to speak about the beverage, but that isn’t his only impressive credential within the world of Champagne. Zambaux is also a proud native of the city of Sainte-Menehould a small town located north east of France. The city of Sainte-Menehould is located in the department of Marne of the French region Champagne-Ardenne. The area is significant because it is also the birthplace of Dom Pérignon, born in 1638, who is credited as making significant contributions to the production and quality of Champagne. “Champagne is a passion! same town as Dom Pérignon is pretty special.” -Olivier Zambaux The top sparkling wine producing countries are France, The United States, Spain, Italy, Germany and South Africa, but few know that only sparkling wine from France can be called Champagne. The Champagne region has over 74,000 acres under vine, 261 Champagne houses (wineries that purchase some or all of the grapes) and over 19,000 growers. The region is split into five areas and each uses a different percentage of the three grape varietals which means the Champagne from each of these areas will taste very different from one another. The Pinot Noir varietal imparts structure and power to the blend as well as aromas of red fruits. The Pinot Meunier varietal is supple and fruity. Its bouquet is intense, developing quickly over time and giving a certain roundness to a wine. The third varietal is Chardonnay, the bringer of finesse. This variety provides a wine with floral and sometimes mineral aromas. Its slow development makes it ideal for aging. “When we think about Champagne, we think about celebration. I do believe that life itself is a celebration so why not enjoy Champagne every day?” -Olivier Zambaux When it came to Champagne, I used to be like most of the population who think that it should only be brought out for specific celebrations. Wedding Toast? Pop the Champagne! New Years Eve? Put that bubbly on ice! Fortunately, a fascinating conversation with Zambaux opened my eyes to the fact that you don’t need to be wearing a tuxedo or a fancy dress in order to enjoy a nice glass of Champagne. Many people don’t realize that Champagne is actually far more versatile with food than any other wine as it can be paired with a wide variety of different cuisines. Another common misconception is that Champagne should only be drunk at the beginning of a meal, but the beverage can actually be enjoyed throughout the entire dinner by starting with a light body Champagne and then gradually moving towards a fuller body.

The next time you’re enjoying popcorn and a movie at home, consider having a small glass of refreshing Champagne with you! I have yet to try it, but this pairing is easily my favorite suggestion as you don’t need a reason or a fancy date to kick back and pop in a DVD. A Valentine’s Day consisting of greasy pizza and Netflix is just as deserving of Champagne as a fancy Valentine’s Day dinner at one of Orlando’s many fine restaurants. If you feel a fancy dinner is calling your name however, consider feeding that desire with a Valentine’s Day celebration at the Swan and Dolphin Hotel. “All the restaurants at the Swan and Dolphin will be celebrating Valentine’s Day! We have an extensive Champagne list and I believe it will accommodate a lot of different palates so people will be able to enjoy some nice Champagne pairings without breaking the bank.” -Olivier Zambaux With over 70 sommeliers on property, there are plenty of experts, just like Zambaux, who are ready to answer all of your questions and make sure you enjoy only the best and most authentic Champagne. For those of you who are celebrating at home this year, here’s what you should look out for when purchasing your own bottle of bubbly. First, the bubbles should be small and should appear as fine, steady streams and be long lasting. Second, the nose should have somewhat of a fruity character, but should also show some of the yeasty, toasty character. Lastly, the palate experience should be dramatic. The once fine, lazy stream of bubbles should explode on the palate and produce a creamy mousse, which coats the palate and last long in the finish. You are now ready to enjoy a nice, chilled glass of Champagne on Valentine’s Day and beyond. santé! Olivier Zambaux

HERE COMES THE FUN First of all, and quite logically, French people do not say “cheers” when toasting. Instead you can use “santé” (health). So that was the easy part. Now you need to be extremely cautious, the following rules are of utmost importance. 1. Look at the person you are toasting with in the eyes. While this is not as essential as the next rule, it is considered the polite way to toast. 2. Do not add ice to your glass of wine. 3. Make sure that everyone toasted before you drink. 4. NEVER cross your glass with someone else… 5. Do not put down your glass between the toast and the first sip. Wait, what if I do cross my glass with someone else? Then you are going to suffer from seven years of bad sex or seven years of bad luck, whichever version you prefer. Note that this is also true in Germany. ONCE UPON A TIME IN THE KINGDOM OF FRANCE These traditions may seem crazy to modern readers, however they did make sense at the time. It’s said that people used to exchange a part of the liquid contained in their glass with the person they were toasting with. That way they could both be sure that none of the glass was poisoned. This is the reason why looking in the eyes was extremely important. This way people could detect stress, but most of all were not able to see if the content of the two glasses really mixed. Later, as the world became less violent, exchanging the content of both glasses became a rare practice while it became normal to simply clink glasses. The fear of poison also explains why not drinking after toasting was considered suspicious.

According to Zambaux, Champagne can even be paired with popcorn! The bizarre pairing was first suggested by his Food and Beverage Director, but Zambaux says he has to agree now that he’s tried it for himself. The acid in the Champagne cuts through oily food and helps to clean that oiliness out of your mouth, so believe

The St. Petersburg Museum of Fine Arts (MFA) has been thriving in the heart of downtown since 1965. The museum is renowned for its extensive permanent collection, which displays artwork from over 4,500 years ago to modern day pieces, all in varying media from differing countries. The Bay area’s MFA certainly offers the most comprehensive art on the west side of Florida—and this year the museum is celebrating its 50th birthday, naturally, with a new exhibit. 50 Artworks for 50 Years, aptly named, is a special project dear to the museum’s heart; not only does it celebrate the MFA’s success and perseverance over the years, but it acknowledges the philanthropy that helped each step of the way. At the beginning of 2015, the MFA set a goal for itself: to acquire 50 new permanent pieces purely from donations. The response from members of the art community was outstanding, securing the museum many more works of art than they’ve hoped-for 50. While many contributors donated the artwork directly, some donated the funds that made the purchase of a piece of art possible. The exhibit contains clay figures, watercolor paints, incandescent glass works, and many other mediums over a dramatic range of geographies and eras. From the end of the 20th century, one of the pieces on display is “Tired of Being the Good Guy” by South Florida native Ruby C. Williams from 1998: an almost childish yellow monster with black spots and many teeth. This work, acrylic on wood, falls perfectly into the MFA mission of preserving “objects of artistic interest and merit.” Ruby Williams had gotten her artistic start with her colorfully painted road signs advertising her home-grown produce stand. “Tired of Being the Good Guy” represents her roots with its medium and stark contrast of bright yellow and black. While the whimsical style falls under folk art, the title of the piece really causes viewers to stop and think, giving it merit as a documentation of art history but also interest as an image with more than a superficial meaning. Another late 20th century piece that was donated as part of the 50 for 50 project is Hughie Lee-Smith’s “The Distraction” from 1994. In the watercolor painting, a man sits on a green bench on the beach tossing a green ball into the air while a woman— perhaps his wife—stands turned away from the viewer in a onepiece swimsuit. Another Florida native, this time from Eustis, Hughie Lee-Smith represents how exactly American artists fit into the predominantly-European movements of Cubism, Social Realism, and Surrealism. “The Distraction” carries a slight touch of the surreal, as the bench has seemingly no place on a beach and the man, unlike the woman, is completely overdressed in his turtleneck and dress pants. The tonal range of blues and greens only adds to this dream-like quality, making the bizarre image more believable with its softness. Again, the painting’s historical placement gives it merit, and the subject matter and its style makes the work interesting. Williams and Lee-Smith are only a microscopic sample of the new artists who have been welcomed to the MFA permanent collection as a result of 50 for 50. Because of the awesome turnout with an abundance of donations, the museum only displays a third of the collection at a time and will continuously alternate the contents until the exhibit’s close on March 13th. The first round of works on display featured mostly contemporary artists exploring the passing of time, portraits, and narrative. The museum’s hours are Mondays through Saturdays from 10 a.m. to 5 p.m., Thursdays until 8 p.m., and Sundays from noon to 5 p.m.

Each year on the cusp between January and February, 19th-century pirates make an appearance in Tampa Bay during the Gasparilla Pirate Festival. The celebration has become a norm of Tampa culture featuring a dramatic performance where pirate ships sail toward Downtown Tampa and demand the key to the city from the Mayor. The pirates then parade through the city, firing off their mini cannons while festival attendees throw beads, coins, and other trinkets at the victors. The festivities continue until the end of February, when the pirates return the city’s key to the mayor and make the return voyage across Tampa Bay. Gasparilla is an essential part of the Big Guava’s character: Tampa isn’t just all Cuban cigars and Busch Gardens—it’s a result of history deeply rooted in Spanish exploration and, yes, even piracy; however, what exactly is “Gasparilla,” and why do we celebrate it? The Gasparilla Pirate Festival is named after the Spaniard José Gaspar, a legendary buccaneer supposed to have raided Florida’s Gulf coast in the early 1800s. As folklore has it, Gaspar was a Spanish naval officer before inciting a mutiny and fleeing to our favorite peninsula. He created a hideout on Gasparilla Island, south of Port Charlotte, and terrorized the Gulf aboard his ship Floridablanca. He reigned over the region, plundering dozens of ships, until December 1821 when Spain sold the territory to the United States. With Americans came the USS Enterprise, a pirate-hunting ship that drove Gaspar to jump from the bow of the Floridablanca, preferring to die by his own hand instead of the enemy’s. While there’s no historical evidence of this grand tale being true, the first written account of José Gaspar comes from an early 20th-century brochure for the Charlotte Harbor and Northern Railroad Company. The pamphlet boasted that Gaspar’s treasure—never to have been found—was buried near the Boca Grande Hotel, a major stop for the railroad. A Boston historian at the time saw the advertisement and took it as fact, including Gaspar’s name in his book Piracy in the West Indies and Its Suppression. From there, the questionable tale has been retold throughout several southern pirate chronologies, giving José Gaspar’s questionable legend an accepted place in Florida’s history. From Gaspar the legend came Gasparilla the festival. In May of 1904, Tampa’s city leaders used the daring tale of pirate conquest to spice up their typical May Day celebration with a spice that would connect with the locals. The idea was to create a Tampa Bay Mardi Gras or Carnivale. Interestingly, the original recreation of the pirate invasion occurred on horseback, with the first invasion on actual ships not performed until 1911. After World War I the festival officially moved to the second Monday in February to coincide with Florida State Fair; the parade route would end at Plant Field in downtown Tampa. While the route has varied over the years, the pirates always march through downtown and past a long stretch of Bayshore Boulevard.

At first, the only “pirates” who participated in the invasion were men who were members of Ye Mystic Krewe of Gasparilla, an organization who exists to this day, using José Gasparilla II, a replica of an 18th-century West Indiaman commissioned in 1954. The festival’s inclusivity expanded as the first all-female and all-Latino krewes participated in 1966 and 1973, respectively, and all minorities were allowed to participate in 1991. In 1988, the opening parade was moved to the first Saturday of February to include those out of town who wanted to attend. Since its inception, the celebration has also added a children’s and high schooler’s parade, a distance classic, a film festival, and a music festival. A highly-anticipated yearly event, the only occasion that Gasparilla has ever been completely cancelled was during World War II. Today, 50 pirate krewes sail across the harbor and march through the city. With approximately a half-million attendees for the main parade, Gasparilla is the third largest parade in the United States and the children’s parade is the largest with a quarter of a million attendees—and it all started with a 19th-century, treasurehungry buccaneer who may not have even existed. Who knew being a pirate could be so much fun?

Puppy & kitten mills are factory-style facilities that breed animals in inhumane conditions and lack the proper medical and nutritional care. Most of the puppies & kittens purchased in pet stores come from these mills, and because of the high profit they receive, the only way to bring an end to the mills is to stop supporting them. Adopting puppies & kittens from shelters is a sure method of restricting the growth of these mills.
